How to Make Punjabi Style Baingan Bharta

Ingredients for Punjabi Style Baingan Bharta:
Main Ingredients:
2 Big Brinjal or Eggplants.
1 ½ Cup Finely Chopped Onions.
2 Cup Finely Chopped Tomatoes.

Other Spices/Ingredients:
1 tsp Finely Chopped Garlic.
1 tsp Finely Chopped Ginger.
5-6 Curry Leaves.
1 tsp Mustard Seeds or Rai Dana.
1 tsp Cumin Seeds.
Pinch of Asafoetida.
1 ½ tsp Red Chilli Powder.
2 tsp Coriander Powder.
½ tsp Turmeric Powder.
1 tsp Garam Masala.
2 tbsp Finely Chopped Coriander Leaves.
Salt according to taste.
5-6 tsp Oil.

Garnishing/Serving:
Some Chopped Coriander Leaves.

Punjabi Style Baingan Bharta Preparations:
Wash the brinjals in running water and wipe with clean cloth, now make 6-7 cuts in all the brinjals, apply oil on them.
Now roast the brinjals on open flame of gas for 2-3 minutes and turn the sides regularly so they don’t get burnt.
Now take them off from flame and put in water to cool down, once get cool peel them and make small pieces of all the brinjals.
Now heat oil in a nonstick pan, once oil get heated add cumin seeds, mustard seeds and asafoetida and wait till they starts slathering.
Now add tomatoes along with salt and cook it till tomatoes become soft then add red chilli powder, turmeric powder, coriander powder, garam masala and ginger.
Mix all the spices well and coot it for 2 minutes at medium flame.
Now add roasted brinjals and mix well with other spices and cook it for 10 minutes at medium low heat.
Now turn the heat off and garnish it with coriander leaves and serve with roti, chapatti or jeera rice and enjoy.
